Does the microphone indicator tell me everything an app is collecting?

It indicates a particular kind of access on the device. Account activity, diagnostic information, and other data flows may not use that indicator; check the operating system documentation.

I hadn't separated microphone access from account activity. A missing indicator would not answer both questions.

Trying the settings before trusting the label.

I'd find a short list of what each indicator covers useful, with links for the different phone platforms.

Checking what that permission actually allows.
